Swamp People: Find Your Inner Cajun - Alligator Recipes
second recipe down - grilled by swamp people.
marinate it in a milk bath (enough to cover the alligator) with Cajun spices for 3-4 hours. It takes the gamey taste out of that there gator.
after you marinate it, take it out of the marinade, roll it in any additional spice mixture you'd like (garlic powder, black pepper, Cayenne pepper, etc.) and brush it with olive oil. Cook on skewers for 10 minutes each side (if large pieces) or until the meat is white and firm.
