Ok, three questions...
to be honest I dont know what grit was used but I can ask, and no sparks at all, you can use a bit of oil on the caliper and then grind.

for the first try we used chalk powder on the caliper, put on the rim, wiggle it a bit then take it of, check which place was touching on the caliper.

for the other caliper we knew how far to grind.

it was literally less then 30 mins.

I know the picture doesn’t show the Clearence, but ill take better pics from behind the wheel to show you the clearance.

just waiting for my tires.

Pretty sure that the lucky8 ones are made at the same factory, albeit without the LR part number on it. Not only was it cheaper to order the genuine LR parts, but if for some reason I have to take the defender in for service and they remove the wheel, the tech will see a LR part number and probably not realize I've modded the vehicle.

I thought about, its a hassle, ordering parts, paying labor fees, brake bleeding and ecu recalibration etc.

Even if I bought the lucky8 conversion kit, its the same thing.

5 wheels were give or take the cost of the above parts.

the only thing im worried about, is if I installed a new pad, will it change or grind more, which will answered once I change the pads.

Nice job !, well done
I would grind a little bit more off, looks like there is enough material left.

yes there was room for more grinding, but im curious about when its time to change the pads, will it move or push the caliper outwards.

If changing the pads pushes the caliper outward and that then creates an issue wouldn’t a set of spacers solve the issue?

10 or 15 mm. Spacers are disks, You don't want that.
minimum will be 20mm with new bolts and lugs.

confirmed, changing the brake pads doesn’t move the caliper.
