If you ever want to figure out tire width and height- take section width,divide by 25.4(that's your width), times that by section height in decimal form, times that by 2, and add rim diameter.
245/75/16- 245 div 25.4= 9.64 (tire width) x .75= 7.23 x2 = 14.46 + 16(rim size)= 30.46(tire diameter)

All you need to know is what to type into Google these days. This is the one I use, you can compare lots of sizes quickly, which is handy.

A buddy of mine has a set of 245/75 BFG AT's on his 95 LWB RRC so I'm going to go over there soon and test fit them to check before purchase.

You will loose a little on the mileage with the bigger tire. Keep that in mind. My speedometer is correct now, but my odometer is off, according to GPS. I am looking at about .5 MPG loss on average.
Good idea to test fit. If he is patient, swap all of them and drive around a little. I can fell a little difference i the height, but not much. Main thing is the ride. I can't feel potholes anymore at all. If you are going offroad much, I would suggest the 75's. They are really comfortable. I just swapped from a 235/75. I wanted to go 245 when I did that swap, but a guy toasted his motor and sold me all 5 wheels and tires with under 1K on them for $300. I couldn't pass that up. I am glad I went with the 245 this time. I would also go with 235 75 over a 245 70 unless it is just for looks. The 235 will dig through mud better...

Not sure how your speedo can be right and your odo is still off.. unless you're just using your gps speedo. Anyway .5mpg isn't bad at all, I was thinking it'd be more. Now is that just on paper loss (getting mileage from tank mileage/fillup gallons) or are you correcting for the additional mileage from the tire change? I'm getting 15.3-15.6mpg pretty consistently commuting about 14mi one way on rural highways (40-60mph).
We're going to try and do them all, it really depends on how much time we have that day.

Do note that these are theoretical measurements. Going from one brand to another will yield differences in these measurements. There is no governing body to make the tire makes follow this perfectly. A large size may fit in one brand and not another.

I had the Toyo Open Country A/T's on my Montero, they were GREAT in the snow and descent everywhere else.

If you want my actual recommendation I highly recommend the Cooper Discoverer S/T.
I have used those for 6 years on my FedEx van and have them on my Disco too.
They wear like iron, low noise and GREAT grip in everything.
I can spin them to heat them up and melt through ice to get to dry ground to get my van unstuck and they keep coming back for more.
