Default Exhaust Components

Hello,
Rookie question, I have never dealt with exhausts before and not quite sure what I'm looking at here.
Could anyone help me out with letting me know what I've circled here?



I need to get the rig to a shop so we can get a new exhaust to mate up to the LS motor, and I'm trying not to sound like a complete ****.

Also, if cats are removed would that create more noise or is that all in the muffler?
and does removing the cats create fuel odor or anything like that?

My idea so far is to have all the unnecessary stuff removed since I don't have emissions testing & get a Borla XR-1 muffler thrown in.
A shop I talked to asked if I wanted to re-use the original piping or go full new stainless, and if I want dual or single. I didn't know what to say...

If anyone can comment on this it would be helpful as well, but would I be correct in thinking if I go dual, it will create low drops on the passenger side for off roading? Stock system is nicely tucked up under the frame, I don't see space for another pipe on the other side.
Is a new stainless system necessary? We were throwing around numbers like $600 using stock pipes and $2k for new.

Those are the catalytic converters.
