what are the common causes of something setting off the 02 sensors code?

Not always....but that is one major and obvious cause.

ive removed my cats and replaced the 02 sensors and the codes still keep popping up.

Cracked intake pipes, defective MAF, intake leak, sticking injector, etc. Depends on what the codes are, rich or lean, etc. Its not like there is just one code.
