Any grease is better than no grease.
Ask 20 people and you'll get 20 different brands of grease.
I off-road a lot so I use Castrol Pyroplex Blue. It's made for heavy trucks used especially in harsh environments and is formulated to get tackier when it gets wet, rather than fall apart like some grease does.

Yes there should be three grease fittings on the double cardon joint.
Just go to AutoZone and buy a grease gun and Valvoline grease.
I use Green Stuff, it is made for farm equipment, same as AntiChrist, heavy duty applications and great for high dust and lots of water.
Grease the u-joints at every oil change.
On a DII the rear driveshaft does not have grease fittings.

When you had the front shaft rebuilt, did they install a new centering ball kit, if not, it will fail shortly.
As for grease, any of the better synthetic greases will work well, grease them twice a year and don't forget to do both slip shafts also.

There are several grease fittings on the DII rear drive shaft. 1 on the u-joint and 1 for the shaft. There is the rotoflex, which does not take grease.

You pump in grease until it comes out, then move to the next grease fitting.

You pump in, in small strokes, a very small amount till you see the cup boots swell up, then stop.
As for the slip shaft, you will need to remove the plug, insert a grease fitting and then bump in a fair amount of grease, reinstalling the plug afterwards.
