18's will give you dozens of tire options, but require a change to the brake calipers if the factory wheel was not originally an 18.
19's there is something like 2 tire options. 99% of the people here will tell you to stay far away from 19s simply because there aren't options for tires.
As far as brands, that'll really depend on your budget.
If I was spec'ing out new rims and tires I would make sure I understood any weight changes to the tire/rim combo over what I have today. Any weight gain in that combo will be noticeable when you hit the go peddle. Any reduction in weight will give you some more zip. Unsprung weight has real impact on performance.

Black wheels aren't an "option", but the dealers are modifying them to sell them.

Only the rear. Those calipers have a couple of "fins" on them which many including myself, have ground down about 1/4" so the smaller wheels will clear. There are a couple of excellent posts on how to modify these.
