It looks like there is only a simple coax wire that goes into the camera, and I don't see a separate wire for power.

The other line going into the camera below is water for the washer unit (its the rear camera). The only electrical connection going into the camera itself is via that coax connector. Is the camera module passive and doesn't need power? or is power delivered on the same wires it uses for the signal? This might end up being quite simple if it's just a passive analog signal.
HD digital video with power over coax. There are many versions of this and it may even be a proprietary (Bosch?) system.

Any idea where the camera controller module is? Tracking down the manufacturer for some technical info would seem the only hope.

Iceman, coax is all you need to provide power to a small divice such as a camera. Very common practice and typical in this sort of application. The cameras draws very little current.

The four proximity cameras are all connected to the Near Field Sensing Module that is under the left front footwell for righthand drive vehicles--as the name suggest, this module handles all near field sensing devices (cameras, proximity sensors and wade depth sensors). Not sure if it is the same location on lefthand drive cars or if it's swapped. From the NFSM, there is a APIX2 cable going to the infotainment module--at this point the video is streamed over twisted pair to the touch screen. So you could use a video splitter/amp where the coax cables connect with the NFSM to get the live stream video from the cameras.

That all sounds very promising, I'd imagine the devil is in the details of processing the digital signal from the cameras. Do you have a picture from TOPIX with the location?

#4 is the Near Field Sensing Module where the 4 camera coax cables connect to and #4 is the Pivi Pro control module

I guess you mean #3 is the Pivi Pro control module? Looks like the NFSM only has 4 connectors going in, is one of those connectors all 4 of the camera coax cables in one?

yes. 3 is the Pivi pro module.

the large connector on the left is for all of the proximity and wade sensors. The large connector in the middle is where the four coax cables are. The CAD drawing simplifies the cable harness and so in reality you would probably see the 4 cables going into the back of the red connector.

Anyone ever figure out a solution or see a product come out? Stand alone dash cams or so last decade, especially considering what Tesla, Rivian and others are doing with their built in 360 cams.

Is there still interest out there for a solution?

Yes! 100%

Has anyone managed to fix this. Dash cam is somewhat pointless unless you can have the side views as typically it’s the doors that get dinged and scraped.

Related to this - I just installed a FitCam X front facing camera and I have the clear sight rear mirror. Seems like it would be trivial to feed that signal into a storage device of some kind for the rear aspect.
