I reccomend 5,000-7,500 mile oil change intervals on the 5.0 V8. That is what I did on my old LR4 with the 5.0 and was favored by many. Frequent oil changes really increased the longevity of the timing chains on earlier versions of the 5.0.
I would do oil changes and tire rotations every 5k-7.5k. Engine air filter can be done every 5k-10k miles. I've been changing the air filter every 10k since new. Cabin air filter should be replaced every year. Transmission service should be done between 50k-75k miles per ZF, and not the 105k (or 144k for the V8) that JLR recommends. All V8 models have the rear diff lock, and I think 15k intervals for the diff fluid is best. I don't know your mileage, but if you're at around 30k, then yes, brake fluid should be flushed. The HVAC doesn't need to be performed unless you are having an issue with it.
Here is the passport to service for the V8 - it can be found in your owner's manual. Follow this, but as I said, oil change intervals should be halved, and the rear diff fluid should be replaced every 15k miles.
Dealer must have a big surplus of AC cleaning stuff they need to sell.
2k for a basic first service. Brilliant.
Reminds me of buying t-shirts from street vendors in Thailand. First price is the idiot tourist price and you go down an order of magnitude from there.
LR sells service t-shirts.
$100 or so in filters oil and brake fluid. A rotation, multi point and a $1500 car wash.
maybe an hour of labor all in.
no need for the AC nonsense.

I echo others’ comments that the AC stuff is overkill (unless you are having an issue). I used to service both LRs at the dealer and every time it was the same dance of them coming with a list of stuff that wasn’t in the maintenance schedule and me declining said stuff.
Once both cars’ warranties were done I decided to do my own work up to my skills (i.e. fluids, filters, brakes) and found a good local indy shop for the more complex stuff. My wallet highly appreciated this 😉.

I guarantee that will not be a $2,000 job. You can change the oil and both filters yourself for under $300. And it's incredibly easy.
Then I would just have the oil, cabin air and engine air filters changed. I would have the dealer determine whether or not it's necessary. If they're unusually spongey, then you might have air in the brake lines, and the brake fluid would need to be replaced if that's the case. I guarantee that will not be a $2,000 job.
