Ordering Dilemma. Decide My Future.
Haven't read all the comments and lists of options, but I would absolutely not accept an off-the-lot vehicle of this price unless it had every option I wanted and none I actively didn't. So I would keep the ordered one on order and when it came in, that would be my truck.
The second question is: do I want to buy a different new car in the interim, until my Defender comes in? That seems like nothing but a financial question. Are you prepared to lose $5-8,000 plus state taxes if a worst-case-scenario happens and the used Defender market softens and starts to behave like used Land Rovers of a mere 18 months ago? That's a low-likelihood scenario but not an unreasonable assumption. If that wouldn't sink your ship, then I see no real downside to "renting" this LR for a few months.
I bought a Frontier in October 2020 for a project I had; I was done with the project in July and sold it to Vroom online for $3500 more than I paid (not counting tax), which was still $2200 more than I had in it total. If yours comes in while these economies are still in play, you should do fine.

I had hope it would be close but 3rd row is a big no thanks. I really need the space. The wrap is cool but it's missing Clearsight, 11.4", and the fridge.

100% agreed. If you don't have one coming, you won't find one on the lot in December/January when I'm possibly trading this one.
So you need to buy something to use while your son uses your current vehicle? Is that more of the concern or are you tired of waiting for your other one? How far out is the delivery of the bronco?
The defender specs you listed don't meet what I wanted. It does not have the off road pack with locking diff etc. 22 inch wheels look cool but I didnt want that large for off road use. I factory ordered partly because my dealer had so many with third row options which I thought was a waste.
I am a very cost functional person. I spent way more on my defender than I had thought I would. I have never spent this much on a vehicle before and I am now pouring in even more on ppf and accessories. I probably would wait to get the one that meets my spec unless the cost for the loss in money towards the taxes offsets the cost for your son to use a car in the mean time. $5K+ probably gets your son around in something functional for a while.

Personally, I dislike selling cars enough that I wouldn't do it unless I absolutely needed a car right now, and even then I'd probably buy something cheaper and easier to move in a flash when the new one came in.
I wanted to do this with a house while we were building our current one -- we lived about 30 minutes away and I wanted to buy something in the 'hood and be down there for the almost 3 years it took to permit, tear down, and build the new one. Then sell it. But the missuz said no way in hell, so guess what we didn't do.
If it was me (which is different than "if I was you") and I actually needed a car right now, I'd buy a lot car from Mazda for xx months till my own LR came in, then sell it for what I had in it or maybe (as with my Frontier) make a little coin on it. But because I'm talking $20-ish thousand, it's not going to matter one way or the other if I make a little or lose a little.

WHO would turn that down? It's a diesel but it's beautiful and not even a double-clutch. Makes me question everything I've done as a parent this far.
Do it. Buy them both and have two sitting in your 3 million dollar driveway. Have ladies wash them every morning as your neighbors go to work in their stale Mercedes.

I voted "no", although it really depends on how you want to spec yours. For me, I added up $11K in options that don't make sense to me ($5K wrap, 22" wheels, 7-row seats, etc.). All that $$ in options and not even the off-road pack on a Defender??? Hard pass for me. Besides, I prefer the P300
