Thought I saw a post somewhere in this forum regarding a recall for the coolant tank for some of the earlier Defenders. I asked my dealer sometime back and there was. The recall was meant to replace the tank do to a small leak around the sensor.
There is/was one for sure. Certain tanks were throwing an erroneous low coolant light. Solution was to replace the defective tank/sensor combo.
I just looked at Topix and couldn't locate it. Could be for a different MY as mine is only limited to 2022. I did see that I now have the open campaign for the PCV replacements. Drats. Now the debate. Anyone want to vote re: which way I should go: A) Order the $13 PCV service kit online and pay $12 shipping. Then do it myself. It looks straight forward. Better, I have the tools! It says it takes .3 hours if the MIL code hasn't tripped. That means it will take me about 1.5-2 hours. Good news is that this could get me in front of the Engine Light tripping that forces me to the last option. B) Do nothing. No lights, no cares. If it lights up, do the last option. C) Call the Dealer. Schedule a visit 3-6 months in the future. Drive 1.5 hours to Dealer to find out that there is no loaner car. Wait most of the day for the shop foreman or service manager (don't know who Air bosses a JLR Dealer) to queue my Defender for the .3 hour flat rate. Drive 1.5 hours back from the Dealer wondering why I just spent this time in the Dealership.

No, I topped it off. It was odd. By the time I finally had my appt, I was beginning to think I had imagined the whole thing.
Insider, I would like to pick your brain again. Today, I received a low coolant warning on my dash. I opened the hood and my coolant is sitting below the min line. The Defender has been mint and no issues of it running hot. There is no puddles underneath it and I wrote the date on the max line which was 3/17/2022 and almost two months later I am below. Does it sound like the coolant is making its way into the engine? I have called LR to book an appointment to see if they can find it but I will be doing my best to find it before I go into the shop.
If it took two months of regular driving to lower your coolant level than this is a fairly slow leak (if it is a leak). I'd recommend that you first conduct a standard pressure test to ensure you don't have a leaking line, hose or other obvious issue. It will likely pass that test, so next you're going to need to run a coolant combustion gas detection test which will let us know if you have a head gasket leak or crack in the block/head. If it passes that test and there are no visual symptoms I'm going to suggest that you top off the coolant again to the max level and track it for another two months.
You didn't mention how many miles you've driven or hours of operation since March 17th so I'm having to make a number of assumptions.

Thank you so much. I apologize as I should have put that info in my post. It is a MY20 with 18.5k miles on it. It takes about 1500 to 2k miles to go from max to low. I have had it in the shop twice and both times they have done a pressure test which has passed both times. When I bring it in, I will ask that they test to see if I have a blown gasket or cracked blocked. Thank you, again
