my shop was trying to push me on the 275/60/20 settup but hearing the possible issues i was glad i went with the 55 series instead.
the 60 do look so much better. No matter what some inner fender modification will need to be done. it could be as simple as trimming and pushing back the liners with zip ties etc. pretty common stuff when going with bigger tires
this was all new for me also. never had a lifted truck with big tires. learning a lot as i go
i have the 1”, 1.5” and 2” lift rods. The 1 and 1.5 ride similarly but the 1.5 helps with clearance. The 2” rides worse and actually causes the tire to rub MORE as the centerline of the wheel is placed closest to the front mudflap
Before you fit spacers ensure they are legal in you area. They are outlawed in may places. I would also do a deep dive into their safety. Lots of folks (engineers/mechanics) are not friends of spacers.
Are you looking to get off-road with those wheels? I don't think those Vossens (while pretty) are designed for that! Certainly those Ridge Grapplers are good for it though!

I am facing the same issue, I tried installing BFG 275/55/20 on my Redbourne alston wheels but they were rubbing and I didn't want to trim anything, whats confusing is that even if I raised the defender into offroad mode, it still rubs.
So im not sure if the offset of the wheels is creating this, and would a lift solve the issue (my dealership officially stated that any change in the suspension such as adding lift rods will void the warranty immediately) which sucks as there is no way to lift the defender for bigger tire.
My wheels specs are:
20x8.5
Offset 25
Back spacing 5.730
