95 drivetrain noise and other issues

Ok guy I am brand new here and I just picked up a decent 95 discovery. This might get long winded so bear with me. It has just over 90K and runs ok. It cam out of an auction so it was doctored up. It has a borla exhaust, MSD ignition, lift kit, braided brake lines, and K&N air filter. I noticed it would start running warm going down the highway with the ac on. When you turned the ac off it would quickly go down to halfway. Someone put 2 new electric fans on with one running backwards, they removed the thermostat, and the brand new clutch fan never locked up. So after fixing all that and flushing the radiator it seems to be fixed, fingers crossed.
My next issue is a rumbling noise I get at highway speeds if I let off the throttle. I can feather the throttle and reproduce the noise. I noticed that all the u-joints look newer and are tight. The rubber coupler is really dry rotted with big cracks. Could this be the cause of my noise? I have one on order. Thanks for your time.
