Default exhaust questions

ok I got 2 falling apart cats so guess options are buy new ones or eliminate them

hypothetically speaking if we were to remove them and put straight pipe in place what would I need to do to not have the cel on or codes from the down streams

since I the engines apart I remember reading something about using range rover exhaust manifolds for more flow instead of the disco ones or headers
if so what year range rover?
