i used SS hardware when i put everything back...

(I know.... I incorrectly installed the cover plate)

I would use a 3/16 drill to remove a 3/16 rivet.

Yeah but we are all cowboys, we ride horses and do manly things, you guys drink tea and eat biscuits.

I wouldn't.
Using a 3/8 (or something a good bit larger than 3/16) allows you to remove just enough material to separate the head of the rivet from the core without worry of damaging the item that is riveted.
At least, that's how I've always done it.
