Default Air con off and coolant temperture drop

Disco 2 2003 V8, hot wheather condition at all time, (have no need for heater so by pass heatercore and throttle body and fitted new 180 Tsat, waterpump, fans, radiator). Did just about everything as Savannah Buzz and Disco mike and others recommended.

Now on good traffic coolant temp is around 188-196F and idle at 200-206F with air con on. when air con off coolant temp drop by5-10degree. Is this normal please? With by pass the heater core does it make the coolant temp higher than those one that did not by pass the heater core please.

Did you confirm the condenser fan is working properly. A/C condenser does come on when AC is running, correct?

Only other thing I can think of, is you deleted a relied on section of surface area (heater core) for the engine to properly expell and dissipate heat.
