Default Exercising my Transfer

I usually shift into LOW gear about once a month and drive down the block once or so, is that enough to make sure it's in working order or should I be doing something else?

Once a month or so is great, you don't really need to take your truck for a walk afterwards, all that is required is shifting it in and out of gear.

How about the locking differential. I shift into that once or twice a month. I have noticed though that it sometimes takes awhile before it disengages, when I shift it back to the right. Is this normal?

If you have a D1 shift linkage in your D2, once a month is still fine.It is normal for the switch in the t.case to activate the light on your dash, don't worry about it.
