There is a slight coolant leak at the back of the head gasket. It ends up on the cats and smells of burnt coolant. Just enough to keep the cats wet, not enough to pool or drip.
There are exceptions to almost every rule, I suppose, but it would be very, very unusual for the leak you to describe to become catastrophic on your trip. The guys at the local Rover shop here have told me about DII owners who go for years with that leak and just keep an eye on the coolant.

Yes, real-time monitoring of the coolant temp is good, but the temps won't go up as long as there's coolant in the system barring some other failure like the thermostat or the pump.

BTW I too use the UltraGauge. It's mounted on a thin strip of Velcro to the left of the instrument pod and leans against the A-pillar.
