Unless it's more than a foot and a half deep of snow it's better to cut through the fluff with skinnier tires. Less resistance forward against the snow as well. Sand however is a different story, get some balloons under there!
Yes, but with 265's and up, if you are really wheeling, your gears and diffs will need to be changed or else you will have very little low end, terrible gas mileage and spider gears that will chatter.
As far as mudding goes, I believe it's recommended to run tall narrow in mud, or icy, lightly snowed roads. Big, wide, beefy, and soft, are good for big rocks and 'Deep' snow.
