My coolant overflow tank keeps peeing

So the new cap seems to have done the trick (knocks on wood). I drove it to O'Reilly and had the same gurgling and hissing, got a new cap, put it on and drove home, no gurgling, no hissing. I've been driving the last few days in 100+ degree heat and it's been running well. AC is blowing cold and no waterfall noise. I topped the coolant off in the tank while cold, and it seems to return to the same amount after cooling back down from a drive. So barring any internal exhaust gas leaking into the system, it all seems to be doing well.

Hi Casey- I have a 2001 disco 2 and wanted to know what size hose you used for the expansion overflow from radiator? My plastic garbage has cracked (installing battery) and now I am pissed beyond belief. Please let me know tube size and hose length! Looks good!
So I just replaced the majority of my cooling system. Radiator, water pump, upper T hose, thermostat, expansion tank cap, the hose from the engine block to the expansion tank, and serpentine belt. I'm not having any more leaks, but I am having an issue with the rover peeing from the expansion tank after I turn the engine off from a drive. I'm hoping it's just as simple as a new expansion tank, but what else could be the underlying cause? Why am I getting that much pressure in the first place?

Also, background history: I had the head gaskets replaced a couple years ago by a L.R. specialist shop and it hasn't overheated since. I did these changes due to water pump bearings out and leaks. So I don't think that should be the issue.
