Default My Oil Vanished?

So I had an upper rebuild/head job done one or two months ago at a LR shop.

All set, no more coolant leaking randomly from the rear.
Car ran and runs great

However yesterday I drove it north about 38 miles and ended up at a Walmart. I was leaving and started up and was ready to leave the parking spot and saw the red oil can turn on. I gave it a bit of gas and moved the car a few inches and it went away. Happened again as I got to the end of the row of cars at the stop sign and went away.

Now I was paranoid and went to the gas station to fill up since I was nearly empty. I checked the dipstick and it was bone dry. I opened the oil cap and steam was coming out.
I did notice for either a day or two the motor sounded a bit louder at startup and idle but no light.

I put some 10w-40 in ~ 2.5 quarts and the dipstick level is between add oil and full. Drove home and all seemed well. Checked after 2hrs parking it and oil level is the same

I'm not leaking oil nor huffing blue smoke.
Could it have been underfilled since it was fixed? I've driven it for about 2500 miles now since the repair.
Anything I should look for?

Sounds like your Disco didn't like being with all the rednecks at Walmart.

Depending on year and miles you will burn some and lose some. 2.5 qts in 2500 miles to me is excessive. Maybe it wasn't filled all the way. Change it out, and monitor often the next couple weeks. For reference, I have to add a qt maybe every 2500 miles, and I have an 00 with 140k

Could be the shop didnt fill it all the way, could be the new gaskets soaking it up, could be getting past the new valve seats as things are not fully "seated" yet.
It is very common for rebuilt engines or engines with valve jobs to use "excessive" amount of oil until things are "run in" and fitting properly.
Only the factory has the tools to get the tolerances nice and tight without being to tight.
You should be checking your oil once a week anyway, keep it full, checking it once a week and see what happens.

Since i put in some random 10w-40 I'd like to get the oil change done and get new stuff in there.
It's a 2003 with 146900ish
Redone at around 144kish

10w40 synthetic should be alright for me right? Winter is almost over here so hopefully it won't be as cold.

Shell Rotella 5w-40, use it all year.
10w-40 would be next in line if you want to stay with the full syn, but it really does not matter.
15w-40 would be good too.
