Default pre-install aftermarket oil cooler questions

hi guys, here is what i got going on. i notice my coolant temps move with the same spikes at the oil temp. being a 2003 disco i have no oil cooler, not wanting to add gas to the fire i don't want to go the stock cooler route.

here is the cooler i got

i originally wanted to use the inlet and outlet bolts on the front cover but i'm not sure if my cover is going to have the necessary pressure supplies inside so i'll tap off my oil filter sandwich plate.

here is my current plate for oil temp and pressure

so i needed 4 ports, 2 for supply and return and two for sensors, got this guy. it has a forced inlet and outlet channel to direct oil thru the cooler.

here are my questions.
where do you think i should mount the oil cooler.
should i put the oil pressure sensor on the outlet before going to the cooler and the temp on the inlet after returning from the cooler?
ill be mounting the fan to a live switch so i can have her run anytime id like including when the truck is off.

I got it from eBay. Have you installed your cooler blwngsket?

Not yet. Yesterday was install and a wire the led light bar and spots lights.
Today is installed the rock/tree slidders.
Tomorrow is install the in line t Stat Modification.
Thursday oil change and new tires
Busy boy over here.

It was a good weekend, on Friday my overflow tank had a crack so I ordered a new one and have the coolant system a flush with the garden hose, installed the new tank and coolant plus a bottle of royal purple water wetter. Right now a hour into driving I'm at 195. But I have not bleed out the air yet will do so when I find a hill to park on. I also installed my oil cooler but did not wire up the fan. The temp is still at 180 and that's great. So I'm in no rush to wire it up yet.

Here is the sandwich plate and temp and pressure sensors installed. I highly suggest you mount the plate first then the highest AN fitting then the AN to barb fitting and hose. Then do the same for the lower fitting. I had the fitting all put together first filled her up and both AN fitting were leaking, so I jumped under and tightened them with little to know room.
