Still that annoying sound and temps up to 221. New low temp thermostat is on its way. Will also check exhaust for leaks and tighten the exhaust manifolds.
If you have a shop vac, it's pretty easy to check for leaks in the exhaust system by connecting the shop vac from it's outlet to your tail pipe so that the shop vac is blowing into the tail pipe. You can then use a spray bottle with some soapy water around the exhaust connections to see where you get bubbles. Sometimes you don't even need to spray the soapy water;you can hear and feel the leak.
This really helped me out. I did find exhaust leaks. Tightened up some of the obvious ones but it also looks like I will need some welding done. Didn’t get around to torquing the exhaust manifolds to the exhaust. I’ll do that later in the weekend.
Pulled the stat and put in a genuine 180 stat. Flushed all the coolant out. Running with water and purple ice - no coolant.

1500 rpms - 210 to 224
2000+ rpms. - 204 to 212
After
idle - 194
1500 rpms - 183 to 188
2000+ rpms - 179 to 183
Fixing the exhaust leaks tomorrow!
I'd advise against running without coolant. Coolant acts as a lubricant for water pump bearings too, and has other corrosion prevention properties. I believe all water wetter/purple ice/etc do is break the surface tension water might have as it runs through channels. Running straight water will almost always have better cooling properties than running a 50/50 mix alone. Some race cars run water. But it's not a suitable substitute for 50/50 in a not-racecar.
