It comes in gal jugs because when a diesel is at the "Add" mark it means add 1 gal not 1 qt.
Big diesels hold over 20qts of oil.
You can use a larger filter if you want, I dont, just go to NAPA and buy a NAPA oil filter.
Purolator are also good, Fram is crap.
Mobil 1 is a waste of money if you are doing normal oil changes, they are meant for 15,000 mile oil changes, if you are not going to leave it on for that long you have wasted $10.
K&N oil filters are made by Fram.

Does anyone else use the genuine oil cartridge? It's the only one I've used.

So it would be perfectly fine to use a mobil 1 filter for the span of 2-3 oil changes?

Yes, but why?

It's $15 for the Mobil 1 oil filter, $5 for the NAPA oil filter.
If you were to leave the Mobil 1 oil filter on and only change the oil as soon as you started the engine the dirty oil that was left in the old oil filter would then be mixed in with your new oil.

If you were a traveling salesman and drove 30,000+ miles a year then that would be the perfect oil filter along with Royal Purple or Amsoil and then change them both every 15,000 miles.

One of the reasons we change our own oil is so we can check things over, if you ignore the oil filter you might not notice the loose hose clamp on the lower radiator hose (happened to me)
Same reason we grease our propshafts at every oil change and not once a year, so you are actually inspecting things.
Oil changes are not just about changing the oil, they are about inspections too.
It takes me a hour to change my oil, the quick lube can do it in 10min, who do you think is actually checking things over?
Why do you think my truck has been trouble free for the last 221,000 miles?
Dealer maintained until I bought it with 152,change, the dealer also inspects everything over.
Catch things before they become problems and you wont have problems.

No, you have to order it and its over priced.
I just go to NAPA, its always on the shelf.
Keep your eye open for their buy one get one sale and buy two.
Now your next oil change is $5 cheaper.
Dont make the mistake of buying a case of oil filters though, you will just end up selling them on e-bay for a loss when your truck gets totaled in a accident.

If you had the choice would you pay $6.99 for a purolator or 12.95 for a genuine?

Purolator.
I know who makes that, I have no idea who makes the Land Rover one, I know it is made by someone like MANN, or some other Euro company, which is still going to be way better than any Fram oil filter.
If I was going to pay $13 for a OEM, I'd spend the extra $2 and get the Mobil 1 and change it every other oil change(so every 10,000 miles).

I use Rotella 5w-40, change it every 5,000 miles.
I always run a stock sized oil filter, right now its a Baldwin oil filter, I bought 3 off of e-bay from a going out of business sale, a equipment rental company went out of business, I bought 3 for $15 shipped.
