Default what temp should electric cooling fan come on at?

I just got mine installed and ditched that power robbing SOB engine fan.
Where should I have it come on? I have a gauge. Right now it comes on at 190 then it gets to 200 and stays there indefinately (idling in driveway with everything on)

Should come on at 210 F, it will stay on if the AC system is on however. If you want to test it, turn off your AC or put it into ECO mode.

Sorry, you misunderstood, I have installed an electric cooling fan in place of my engine powered clutch fan, so I'm trying to tune that.

It very much depend's on what temp your truck runs Ina cool day in cruising speeds, because if it can maintain a cool enough temp, then you don't need it to start working below that temp, & just set it a couple degrees above that, so it would go on when you go slower or come to a stop, there is no reason for fan to work all the time,, if you set it too low & truck normally runs hotter than that then it will come on all the time after engine warms up,, so it's your choice if you want it on all the time or when it's really necessary,

If you have an ultragauge or other way to read actual engine temperature you can adjust accordingly to reach desired temp. Don't run too low or it will think it is still in warm up stage and run rich. Keep around mid 190's(F). 210 too high, low 180's too low.

Could you post pics of your setup? What fan did you use?
