Guessing... plugged at a radiator sensor of some kind in a previous radiator ? Check its length towards the radiator near bottom, confirm wiring colors with schematic. A radiator sensor is an option not all models have. Image shows where it would fit :
Don't worry about stray plugs. Like almost every vehicle manufactured since, oh, the mid 1980s, most of the wiring loom is standard across all models, even if your particular model doesn't have all the accessories that the loom is designed for.
That looks suspiciously similar to the camshaft position sensor, in the right area too. If you have a small inspection mirror you check it to make sure. It's on the engine front cover in the vicinity of the water pump.

It is definitely possible to plug it back in without tearing down. I believe you have to go in from underneath the engine. I honestly don't know if the truck will run without this plugged in, I suspect I will not. Either way I would not attempt another start without getting this plug connected. If you have trouble let me know, I'll go out and see what the best way is to access this plug on my rig.
My camshaft position sensor was snapped at the cable for about a year before traced it back and repaired it. Didn't run great and drove/idled with a pulsating vibration but never prevented a startup or driving 20k miles like that. Get your engine read or buy an ultragauge, it's an invaluable tool.
In that same neck of the woods is the oil pressure sensor, back behind the water pump. Cam position sensor can be done easily from under the vehicle, oil temp sensor can as well or from the passenger side above engine but you'll be working blind.
If it's oil pressure, your oil light will be illuminated on the dash. If cam position sensor, check engine will be on.
When doing some wiring in the woods once I accidentally managed to trip the ignition kill switch and it would crank no start. Find the button on the firewall and try pressing that, maybe something super simple like that.
Check that you're getting fuel pressure at the rail. [Edit, just saw you did that already.] Is fuel Pump energizing?
