Default gas in the cold

i am planning to do some driving into Canada over Thanksgiving week, and I want to carry extra fuel.

Will gasoline become unstable if it is in a plastic jerry can on the roof in freezing temperatures?

i have heard of diesel becoming "jelled"... but wasn't sure about gasoline.

Why carry extra gas, they have plenty of gas up there?

gasoline will still ignite around -90*F so I doubt you'll have any trouble.
