The A/C doesn’t begin cooling until I have driven about 5 miles, no matter how long it sets idling prior to driving. At first the temp was nice and cold once it did start to cool. Now it doesn’t seem to be as cold. My truck A/C is much cooler by comparison.

check to see if your electric (radiator) cooling fan is coming on when you turn your ac on high, you should be able to hear it, pop the hood and look.
If it isnt theres your problem, could be several things causing it not to come on, get a code reader and see whats up.

Yes, check that asap. If you have no radiator fan that will overheat and damage the cooling system and maybe the head gasket and engine. Overheat will occur while sitting idle, at any road speed you should get enough airflow to keep it cool.
