Welcome! My advice : Test drive as many as you can, and find one with LOTS of service records.

What model and what years are you looking at?

There's plenty of them to choose from around here. Try to get one from someone who lovingly took care of it - it should be in better shape than most.

I'm looking for a 2000-2004 Discovery. I've seen a couple of '04s that I like. Trying to learn more about them.

From my limited reading/knowledge, in that year span, you'll be best served with a 2004.
