Now I'm looking to change my se7 to a 5 seater and get the cubby boxes and whatever else I need to make it work.

You really don't need anything unless you're hell bent on having the cubby boxes. The upper panels on the left and right only differ in that the SE7 has the cut outs for the upper grab handles and the seat belts. That is, as long as you don't have rear A/C. The lower panels in the SE7 aren't set up for the cubby boxes.

Your best bet is to buy those panels as close to home as you can. It will cost a fortune, certainly more than you're likely to pay for the panels, to ship them by UPS or FedEx.

I've got the rear a/c and I'm fine with just the lower portions of the package instead of the upper and lower parts since I plan on modifying it for overlanding on the passenger side. Inverter, switches, etc.
