After contemplating a defender, I think I'm going to stick with a sport. Currently, I have a Dynamic, but will go with the SE in black. The lower portion is that grey plastic. Do they make a wrap that matches the santorini black or do you think painting them is a better option?

 

I'd look for Santorini black lowers first

If that proves to be too difficult you can wrap the lowers. Ours had the rough lowers despite being a Santorini black supercharged dynamic. We wrapped it and the wrap has stayed fine for going on about six months now
