How hot should my 2003 run if the ac on

I haven't replaced my fan clutch yet so Im thinking that's probably getting tired. Just ordered a new fan and Hayden severe duty to see if that'll bring temperatures down.
I want to keep it 188-199 regardless of AC and weather. 215 makes me uncomfortable.

Well I have the 180* gray stat installed for over 6 months now.
Temp in the city is 180-190.
Yesterday driving up the in Rockies at around 8500ft with AC on and outside temp was about 85*. The temps ranged from 195 -220. After the climbs were over the temps settled around 195 - 205. Solid 188* back down the mountains.

Throwing this out there but how much variance would you think there could be between people temp sensors? So I replaced my most my cooling system last year (and doing most of it again since viscous fan exploded) but it included 180 LR thermostat, new viscous clutch (not fan), radiator, water pump, electric fan, and hoses. I run 190 to 194 pretty much all the time if AC on or off but will climb to 204 or so if idle for a long period of time. I am ok with that temp but I see a lot of people say they are at 197 to 200 at idle. I am just wondering if our temp sensors could vary by 4 or 5 degrees?

New gray LR 180-deg thermo, new Nissen radiator, new water pump, new temp sensor ... all replaced last fall. Original head gaskets at 113K miles.
Took the Disco and off-road trailer to the NW Overland Rally. Crossed Stevens Pass and hit 6,000-feet elevation. Engine temp occasionally hit 225-deg. Turned off air-con as a safety measure.
Engine temps would run 188 to 194-deg all day long at sea-level on highway speeds.
Idle with air-con running is 194 to 201 at 95-deg F ambient.

I had my Ultragauge set to ping me at 220-deg. There was only one time when I had to turn off the AC when the engine temp went above 220-deg.
I checked the coolant today and there was no coolant loss. Perhaps it is time to change the A/C condenser fan.
