Default Air suspension leak perhaps?

I’m new to my 2021 110 and sometimes when I go to start the car after not using it for a day or 2 the air suspension kicks in and the car does a little dance and levels out the suspension. Could this be an indicator that I have a slow leak in the system?

Usually If you have a leak you'll come out in the morning and your nose will be on the ground, or your rear will be on the ground.
If it's just adjusting a little side to side it's probably not a bag leak. (at least that's been my experience with MB products, and I've replaced air suspension on 4 vehicles so I've had a few mornings like that.) It always seems to adjust a little when it's first started.

Also this time of year it can be quite a bit colder in the morning than when it was parked which will change the pressures a bit. A bit of a tweak on start seems expected.

When you exit the car does it go into entry mode(lower)? and then when you get back to the car it will raise slightly into regular mode? Check your settings

navigate to Vehicle Settings > Convenience > Vehicle Access and toggle the "Automatic Access Height" option

Not exactly the same issue and I'm not even sure if this is an issue to be honest. But, has anyone noticed that the air suspension goes to max height on exit when not on level ground? I have auto access height enabled and normally it does its thing just fine, but I have an upward slope about halfway up my driveway. When I get on the slope and go to exit for some reason it is going to max height.

I never noticed it and I'm not sure if it has always done this, but my wife started complaining about the truck being so high when she tries to get in.

Defect or normal behavior?

Are all four corners going to Max Height? Or is the car trying to figure out level with each corner slightly different. You should be able to view your defenders level and angle in your PIVI. If your defenders all four corners are are at max height on a slop that should also reflect in PIVI as to the angle of the slope you are on.
