We have the Exped Sim Duo 7.7, it is 76" long and you are correct, by laying it over the small height difference of the lower seat, it is barely felt especially since we put our heads on that end with a pillow.
We took the seat bottoms out in my wife's 4Runner for the same effect, but the D110 is wider inside and has more useable headroom so we find ourselves using it more & more. Really a nice solution for us as we like to travel minimally and would never mount any rooftop tent. You also have ample room in the footwells for additional storage of items when configuring this way.

We have spent several nights in the back of Rovid, use an Exped mattress and then bring our pillows and sleeping bags, sleep really well. For reference I'm 6' she is 5'6". Very vertical cargo area helps with the space inside, certainly longer than the D2 I used to have.

I was also worried about the cargo space in my 110 before I got it. Read a lot about it and studied the dimensions like crazy. I will say all that worry was for nothing. The square shape allows for much more usable space than my previous vehicles. Maybe for previous owners of the lr4 or old defender they have issues but coming from a cayenne and model y with a ton of hidden compartments I can fit a lot more than expected in the defender.
Also if you have the 7 seater you can move the seats up as much as you like to reduce the legroom for your second row passengers giving you even more depth. Albeit with a bit of a gap in the floor

I got the 3rd row and having it allows me to slide the second row seats forward a good six inches or so, which increases cargo space (if your not using the 3rd row) and with this additional space I'd say its very close to the cargo space in the D2. So for family trips I can cram more in the back. Yes, the only drawback is you can't fold the second row down (not a biggie for me).
There is plenty of cargo space in the new Defender. I also have the Discovery and it has more cargo space (but I believe it is 4 inches longer). My piece of advice: do not get the 3rd row in the Defender. The seats do not go fully flat if you get the 3rd row in the 110--that frustrated me a bit. The 3rd row is really not practical in the Defender; the Discovery 5 has a true 3rd row.
