But it's up to the lawyers to argue what is related to what. So, if you make a GAP change to your engine's parameters and something happens to the engine - good luck. Will they honor it? Maybe.

Gap tool isn’t modifying the car software at all. CCF files (car configuration files) are optional settings created by JLR themselves not by an independent party. Further you are not making changes to the programming outside of expected factory params (such as an ‘engine tune’ that may tweak boost and fuel levels for the engine outside of the factory specifications).
So the risk here is you pick a configuration that JLR didn’t test and things don’t work— then just change it back.

You’ll likely be able to restore the original CCF before a serious warranty claim.
I’ve had the shop work on my vehicle as modified, and as far as I know they’ve never noticed the changes, even having swapped my mechanical gauges for an IDD.

Reading through this thread and trying to educate myself about using a GAP tool and if I want to take the plunge. ( I’m not very computer savvy, so I’m a bit intimidated by it)

Open all windows via a long press on the unlock button on fob. Standard on all defenders worldwide. Global close does the opposite with the fob lock button.
Not allowed on cars in North American market but is an option in the Defender’s PIVI for all to see. Activate it by changing 1or 2 lines of code in the CCF and selecting global close in PIVI.
e-lift is my term for what the gap tool offers. Call it iLift if you like as you use your phone.
An on demand lift that you can customize to be as big as you want to the point of maximum airbag inflation. Have it lifted for as long as you want. Minutes or months. Revert to stock on demand. Very useful on the trail if you need a little more clearance for a bit or if you want to run bigger tires. It makes lift rods obsolete.
e-lower is a term I use. it is the opposite. Lower as low as you want for as long as you want. You can drive around lowered like some sort of redacted or you can even drop to the bump stops to sneak in and out of a tight garage. I use it when I'm laden with skis and rack. Very useful to me.
