Low Tire Life
Pirelli Scorpions, 20”, w/15+k miles on my 2022 Defender 110 X-Dynamic SE and they barely show signs of wear. 50/50 mix of City/Hwy driving and off the record, the highway speeds are average 80-90. Sounds high, but where I live anything under that and you’ll be run off the road. That’s just to keep up, and out of the way of the flow of traffic.
Don’t the tires come with a tread warranty? I would think you could simply go back to the tire manufacturer for a replacement. If no warranty, then recommend you buy tires with a warranty going forward. Only time I’ve ever seen anything similar was with performance tires on a dormancy car. Soft rubber no warranty = short lifespan.

Do you have any other data such as actual tread measurements?
Get a tire tread gauge from Amazon and make a spreadsheet. Every 1,000 miles go measure the same spots on all 4 tires. Measure outer, middle, inside for each tire. Document and repeat every 1k miles.

What you're experiencing is not normal. What the tire guy is hearing is that Defenders use up tires quickly... yes this is true... but not at a rate of 5k miles per set. 30-40k miles is pretty normal and that's considered short with some of the high mile tires out there. I've got 20k miles on the original set and based on actual measurements taken during the last two oil changes I'm seeing minimal, if any wear.
