Does anyone know what the ZIG ZAG lines on both side windows are for? Also, when you open either door, what does the little icon that lights up on the arm rest mean?

The zig zag lines on rear side windows are radio antennas / connectivity antennas for something. But they are definitely not heating elements if that's what you are wondering.

For the little light on the door, they light up if a car is approaching, letting you know that you perhaps should not open your door! It's called CLEAR EXIT -- this video explains it on an Evoque, same system on Defender.

One light up whenever I open the door. I guess starts just how they work.. they must light up BEFORE opening the door if there is something coming , I guess.

According to the manual, it always lights up WHITE to show the system is active when the door is unlatched. It turns AMBER to indicate it is not safe to exit the vehicle when it senses an approaching object or vehicle from the rear. So yes, it is normal to illuminate every time you open the door.
