2023 brochure still not out and this is the 2022 options (because I don't have the 2023 options either). But I think it still applies.
What will be covered: Steering wheel, Drivers Air Bag, Door Upper Top Rolls, Fascia Hoop, Lower Console Rails, Seats, Center Console top. Note the disclaimer: "Leather seats/interiors and steering wheels (all models) may include some non-leather materials on certain surfaces" Basically, all bets are off with the shortages. You'll get what you get and be happy! (or so says JLR).
Re: quality vs. grained - yer on your own. Haven't compared them but I have read maybe one posting that they liked it. Most of the threads were about people upset about the early runs of Robustec. Good luck and sure you will enjoy it.

1: What exactly is covered with the extended leather? I just don't understand from the on-line configurator.
2: Thoughts on quality vs grained.

1) The dashboard hoops and the door tops are key additions among others. The extended leather package is something I recommend as it significantly transforms the interior and gives it a much improved feel. I also find that it's easier to keep clean from white dust and hand marks.
2) The Windsor seats are not more durable than the grained seats, but simply higher quality. The headrest adjustment is superior.
If you are ordering the vehicle and intend to keep it for many years build a Unicorn: choose the resist seats (synthetic leather) and pair them with the extended leather package before the option goes away. The seats will last the life of the car unlike leather, but the you'll have a beautiful dash and doors.
