Default Codes P0118 / P0125

This weekend my 96 Discovery 1 had difficulty starting on several occasions.
Seemed to be running extremely rich nearly flooded in fact


Pulled codes yesterday which were -
P0118 - Engine coolant temp. sensor high out of range fault
P0125 - Engine coolant temp. sensor warm up fault


Would replacing engine coolant temp sensor (two wires) fix this problem? This is near the thermostat ?


Once running everything seems fine.

Does the engine ever warm up? Where does the temp gauge sit? Probably it's the sensor, but just making sure it's not a thermostat issue.

The engine warms up fine as it always had no issues there. Thermostat / water pump changed about 15,000 miles ago. Temp gauge also operates as normal and settles in a just a hair below 1/2.
