If so, you should be able to check for fuel at the injectors. There is a shrader valve. If no fuel, next I would check for power at the pump. There should be an access in the cargo area, under the carpet and pad.
There are places cheaper than $510.

Like Jafir says, check with pressure guage at schrader valve on fuel injection rail. Should be 32-34 PSI. If 0, pump is not running, check for fuses, bad relay, etc. If low, change fuel filter. If still low, pump is suspect, you can go new, or after market for just the pump section (under $100), pre-owned from a dismantler on this forum, or takes your chances with one from a salvage yard.
Also, free download of the complete set of factory tech manuals, called the RAVE, covers this in the workshop manual, also has electrical manual, body manual, owners manuals, etc. And in the Discovery1 section of our forum you will find the technical listing that has lots of things to do and fix on your new truck.

And if it turns out you need a pump, based on the fact that the fuse and relay are both good, then go to Advanced Auto and buy an AirTex E-3270 for around $80 and only replace the pump, not the entire pump assembly.
The mechanic would do well to check the alarm system, which may have been triggered during the theft of the stereo. That could trigger immobilization, which kills fuel pump and other items:
from the RAVE electrical troubleshooting guide:
This can require a trip to the dealer by tow truck, or a skilled and experienced mechanic with the RAVE documents as a guide. The module mentioned is located inside the dash and is difficult to reach and bypass.
Land Rovers cost so much new that the factory decided that anyone who could afford one, plus the repairs and service, would have plenty of spare gold to carry around, and need a complex security system.

The Remote “Smart Spider” Immobilisation is
controlled jointly by the Engine Immobilisation
Control Unit (Spider) (Z271) and the Theft Alarm
Unit (Z163). When the Theft Alarm Unit (Z163)
immobilises the vehicle, it sends a signal to the
Engine Immobilisation Control Unit (Spider) (Z271).
The “Spider” then interrupts the starter circuit, fuel
pump circuit, and Ignition coil circuit for MFI–V8
engines, or the starter circuit and the fuel pump
shutoff solenoid circuit for 300 Tdi without EGR
engines. These circuits will remain interrupted until
the “Spider” receives a mobilise signal from the Theft
Alarm Unit (Z163).
