I wouldn't be happy running it for so long at that temperature.
I don't recall which thermostat you have?
I'd be thinking there might be something else going on, other than just difficult to bleed, to have those temps 'and' the bleed difficulties.
Edit, just read up a bit. 210k, maybe orig water pump? Hmmm

Is this a vehicle you just recently got?
Edit: Never mind, I just saw you got it in September. When you replaced the hoses, how did the insides of the old ones look? Could a pervious owner have used copious amounts of stop leak? That happened to a D2 I'm working on. Hoses were gunked, radiator was gunked, had to use a different intake because the old one was clogged, water pump was rusty, corroded, and pitted.

I have a another motor but with the heads done I am trying to get the bugs out of this one. Paid $1,350 for the truck so can not get hurt to bad.

Here is one for the expert folks to chew on. The GROUND cable on the battery was lose and bouncing on and off (found out when it would not start) dead blow to the terminal after I tightened it as far as it would go.
The wild result was I had a temp DROP of 10deg on the UG??? Did nothing else.
Today I parked it on the driveway with the read end down, did I mention my driveway is almost 45deg rise, and let it idle. Drove it after 15 min and NO WATERFALL at all. Temp looked god with a high in town of 204 instead of 224, the dash gauge was still as always DEAD CENTER.
Will drive it out to my hobby shop today and see what happens. Shop is on the left, storage is on the right.

Did some flir work on the 00
You can ID where you are at on the car the hard to see is the two small line on the throttle body.
Readings with engine running when these where taken
UG 121 deg
Dash Gauge Dead Center
Pic #18 is the heater supply and return
Pic #17 is the stat (180)
Pic #16 is the overflow tank
Pic #15 is the Throttle Body
Pic #14 is the top hose
