I sort of figured I may have pressed the shaft back in just a hair too far but the damage was done and I needed a new pump so I didn't waste too much time worrying about how it happened and chalked it us as an expensive learning lesson.

It's an easy mistake to make. Land Rover probably designed them specifically for failure! LOL! At least you didn't miss it and reinstall it. That would be the hardest lesson!

Quick question regarding the PS pulley - is it supposed to be pretty stiff? All my pulleys spin freely (except for the bottom one ) but the PS pulley takes a bit of force to turn. PO had the pump replaced just before I bought it. I've also noticed some squeaking/ticking noises from the belt area when engine is running.

Yes should have resistance, it's a hydraulic pump.
