Aren't narrow tires better in situations like those because the smaller contact patch translates to high pressure on the ground? It's certainly the case with snow tires but I'm wondering if there's something about wide tires traveling on surfaces like those that I'm not aware of.

ya interesting. I always hear bigger wider tires the better. But it’s hard to go bigger and not wider. I’m going to look into this more

This is what I read too, they cut easier into snow and mud. Wider tires have higher rolling resistance, higher weight, higher unsprung weight aso. I think many prefer wider tires just for the appearance.

Wider tires have their place as the contact patch is even larger when aired down. Hugely beneficial in sand, mud, deep snow, and even rock crawling. Narrower tires are fantastic for packed snow and ice but can "dig" down too easily in mud or deep snow making it easier to get the frame nice and stuck. But yes most people do it for the appearance, with a proper sidewall there are huge upsides (assuming the width is within reason...). Also skinny pizza cutter wheels can be a little sketch at highway speeds imo.
