So, my Disco doesn't have the center console mounted larger cup holders. I was able to pick up a set, but have a question about mounting them. On the bottom there is a little nipple (circled in pic). Do I need to cut off the nipple for installation since it wasn't a factory installed option on my unit, or is that nipple there to intentionally offset the holder from the console?

In a truck with holders there is a little hole that the nipple goes into. Break out your drill and tape measure.

Move your seats all the way forward, put the cupholders right against it.
