Default Food for thought on my Cooling Problems

Ok here I go, I replaced the head gaskets with a new water pump and the car runs great. Took it to LA and is seemed to be running warm in traffic 221. I'm using and Torque App on my phone with a OBD II Bluetooth adapter. I put in a Motorad 180 thremo, replaced the Radiator and fan clutch. Now though the app it can get up to 117. If I reve the motor up the temp will drop to 199. When I'm driving along it is around 203. If I put my foot into it or climb a grade on at freeway speeds the temp drops. So it seems to me that new water pump needs a smaller pulley to get it so spin faster to move more water. Or can I have a air bubble in my system? Any thought anyone?

Also the new radiator has drain pepcock where the old one had a temp sensor but nothing hooked up to the senior so left the pepcock int. Whats that all about?

go inline. Im averaging 179 after head gaskets with an original fan clutch, semi new radiator. My wife has the genuine grey T stat and runs in the hi 80's. Still running Dexcool on hers. Need to flush it next.
