Im from Cotto Laurel/Ponce living in NJ.I have been debating if I should go with the 180 degree motorad but might just do the in-line thermostat modification.

The in-line is more money, drops it into 180 - 190 range. The grey soft spring will bring it into the 190's. The reliability of the "real" grey stat vs the motorad (there have been complaints, and when you figure how many have tried it, that is a high percentage) makes you wonder about saving a few bucks.

Buzz

For my sealed block, do you think I should go inline to get temps as low as possible, or will just going grey be enough?

Well, you are on the edge. I'd say the in-line mod would give you options. Don't like one temp, you can put in another stat and change that (190, 180, 170, 160). It may get to driving a chilly Rover, but at least it is driving.

I stand by the motorad t-stat. Since installed I'm at 194-195 during the day and 188 at night. No complaints.

OK - I installed the factory grey warm climate soft spring today. My ultra gauge went from a range of 206 to 215 down to 183 to 188!

I have 152k miles and just had the head gaskets done 7k miles ago so I feel much better being in the latest temp range!
