I know I need to replace the manifold gaskets, and figured I might as well do the Y pipe. Just trying to anticipate the amount of time it might take... a few hours? All day?

All depends on the bolts. If they come loose the manifolds are not bad to do. Y pipe can be a pain but also hinges on the bolts. Things start snapping and needing drilled and the game changes

Noted. Let's assume after soaking in PB for a few days beforehand and they all come off... couple hours?

Also if you have SAI it's a little tougher, and the drivers side has the steering shaft in the way which sometimes can be in the way or hard to work around.

Budget a day, the manifold to head bolts are the one you do not want to snap. The Y pipe is painful if you snap studs but pretty easy to fix. Just take you time and do not try to force anything, if you get a couple of turns and it sticks more PB run it back in then back out
