Just purchased 2001 LR series 2.
If you are running 18in rims I would recommend going with a 265/60r18. That's around 30.5in. That is the size I have on my stock height 04, and they fit perfect with no rubbing at all. Ofcourse this is with newer springs that aren't worn out and droopy. So if yours are worn out then it might be a tighter fit.
And if you get a matching spare then it is the biggest you can fit without modifying or flipping the spare carrier.

There's a faq on discoweb that lists tire sizess from stock to various lifts.
Just an fyi, the Land Rover Series II ended production in 1961. You have a Discovery II or Discovery Series II.

Oh, these Newbees!!!!!!
What will you be using the truck for, Are you still on the original suspension?
Have you looked at my major service list, especially the front drive shaft issue?
