Illegal to use them on public roads, in most every state. Some like VT even require that the lights have to be covered while on public roads or you can be fined.

I have an extra button or 2 in my truck as are blank and not being used. One of them I believe is located on the drivers side on the odometer console bezel. I want a clean look so I figure using that button will be perfect. So how do I go about installed the light bar I purchased so I can turn it on and off via the button?

You can mount it wherever you like. Using it on the roof on a public road however is a different matter.

Most of those "switches" are blank off plates I believe and won't function as a switch.

Get an extra Fog or Cruise switch with pigtail. There's a Pin out diagram for those switches floating around somewhere.
You'll need a relay as well.
Read this.

I just ordered a spare cruise control switch and a fog light faceplate to switch it out and a relay from Abran. I hate electrical work..... so confusing. I looked at the diagrams and its beyond my comprehension. But you gotta start somewhere I suppose.
