manually locking the doors
I'm putting the disco to bed for a while. Took the battery out, added fuel stabilizer to the gas tank. Question on the locks. If I manually lock the doors,
will I have any issues opening the doors to pop the hood when I return to get it back up and running?

As long as the driver's door lock physically locks and unlocks with the key then you will be able to get the door open to pull the hood release.
I'll edit this for a little clarity:
When you "wake" the truck back up, my advice would be to pull the hood release and open the hood, then relock the drivers door with the key and put something on the hood switch to simulate the hood being closed before you hook up the battery. Then use the fob to unlock and lock the doors a few times remotely, finally leaving them in the unlocked state, before removing whatever is making the BCU think the hood is closed.
